For barbeque sauce:
½ C. ketchup
1 t. mustard
2 t. Worcestershire sauce
1/4c lemon juice
2 T. soy sauce
¼ c sherry (optional)
Blend all dry rub mix ingredients together. Place ribs in a
single layer in a large pan and rub ribs with 2/3 of the mixture. Loosely cover
the pan with aluminum foil and refrigerate for 8 hours or overnight. Drain the ribs reserving the liquid in the
pan for later. Transfer ribs to a large
roasting pan sprayed with cooking spray. Rub remainder of the dry rub mix on
ribs. Loosely cover the pan with
aluminum foil and place in a 450 degree oven for 15 minutes, then finish the
ribs on a hot grill for 8 minutes, or until done, turning after 4 minutes. Reserve the drippings from roasted ribs.
Barbeque sauce:
Place juices from roasting pan and reserved juices from rub
marinade in a sauce pan. Add barbeque sauce ingredients. Bring to a boil.
Reduce heat to medium and simmer sauce 10 minutes. Baste the grilling ribs with
this sauce just before they are done and serve the rest of the sauce with the
ribs.
Maple Sugar Cinnamon Buns
These melt in your mouth delicacies made with pure maple sugar would put the ones you get at the mall to
shame. Delicious as a breakfast treat for the occasional overnight guests, an afternoon snack or a
nighttime nibble while cuddling up with a good book.

1 cup warm milk
2 eggs room temperature
1/3 cup melted butter
4½ cups bread flour
½ teaspoon salt
1/2 cups white sugar
1 packet yeast
1 cup maple sugar
2½ Tablespoons ground cinnamon
1/3 cup butter, softened
1 (3 oz.) pkg. cream cheese, softened
¼ cup butter, softened
½ cup maple sugar
1¼ cup powdered sugar
½ teaspoon vanilla extract
1/8 teaspoon salt
In a small bowl combine milk, yeast and sugar. Stir until dissolved. Set
aside. In a large bowl combine flour and salt. When yeast mixture bubbles blend
it to the flour mixture. Add melted butter that has been cooling a bit to the
mixture and the eggs. Blend ingredients and knead dough until smooth elastic. Place in a large greased bowl. Cover and let rise until doubled in size. Punch down and let rise again.
On a lightly floured surface, roll out dough to a ¼ inch thick rectangle
approximately 16x21, Spread 1/3 cup softened butter over surface. Combine
cinnamon and maple sugar and spread it evenly over surface leaving a 1 inch
margin along one of the long edges. Roll up tightly, starting from a long side.
Press together seam. Cut into 12 rolls. Place rolls in a 9x13 inch baking pan. Cover and let rise until nearly
doubled (about 30 minutes).
Meanwhile preheat oven to 400
degrees.
Bake rolls until golden brown
(about 15 minutes)
While rolls are baking beat together cream cheese, butter, maple sugar,
powdered sugar, vanilla and salt.
Spread frosting on warm rolls
before serving.
Balsamic Vinegar and Maple Sugar Salad

This is the best salad dressing for
tossed or pasta salads you may ever find. It is easy to make but has a sophisticated
enough flavor to impress even your pickiest friends.
¼ cup Balsamic
Vinegar
1 t Worcestershire
sauce
2 T maple sugar
1 clove of garlic
finely minced
¼ cup ketchup
½ cup olive oil
Mix well and serve over lettuce or pasta salads
Maple Honey Almonds

These coated almonds can be very habit
forming. Great idea
for gifts or for your next party appetizer. Make enough so you can indulge yourself on these sweet nutty
confections.
2 cups Whole Almonds
¼ cup Honey
2T. Butter, melted
1 C. Maple Sugar
1t. Salt
Spread almonds in shallow pan. Place in cold oven. Turn oven
to 350 and roast almonds 12-20 minutes, stirring occasionally, until well
roasted.
Over medium heat in saucepan, heat honey and butter to
boiling. Reduce heat and simmer 2 minutes stirring occasionally. Add almonds
and simmer 2 more minutes.
Using slotted spoon, transfer almonds to a baking sheet
lined with parchment paper or sprayed with non-stick spray. Spread almonds in a
single layer and cool slightly. Using a plastic storage bag, toss almonds with
maple sugar to coat
Maple Roasted Winter Squash

Winter squash and granulated maple sugar
go together like a hand in glove. You
will love it.
Cut squash in half. Remove seeds and strings. Place 1 Tbs. butter and 2 Tbs. maple sugar in
each squash’s bowl. Place squash in a greased shallow baking pan or on a
greased cookie sheet. Bake at 400
degrees for 1 hour or until a fork inserted in the thickest part of the squash
proves that it is tender all the way through. Baste with the squash bowl’s melted butter and maple sugar every 15
minutes or so.

4 Granny Smith apples

1 Recipe of double crust pie dough
Cinnamon
Butter
Cardamom
Preheat the oven to 350 degrees. Mix up your favorite double crust pie dough
recipe. Divide pie dough into
fourths. Roll out each fourth into a
square large enough to eventually pull up the sides of the apple and pinch
together at the top. Cover dough with a
damp cloth until ready to use. Peel and
core the apples and place one in the center of each dough square. Fill apple core 3/4 full with maple sugar,
top apple with a shake of cinnamon and a sprinkle of cardamom. Push a teaspoon of butter into the core. Pull up the sides of the dough around the
apple and pinch together the seams pulling off the excess at the top. Bake for 35-40 minutes until golden brown. Serve with real vanilla bean ice cream and
hot maple sauce. Any pan juices may also
be served over the top.
Maple sauce
An antique but very simple recipe.
1 Pint maple syrup
¼
cup butter
Boil butter and syrup until it forms a thread when dropped
from a spoon. While hot, pour over
vanilla ice cream or apple dumplings.
